Homemade marmalade with agar-agar

Homemade marmalade with agar-agar is a delicate, refreshing treat that combines the bright citrus flavor of oranges with natural sweetness. Agar-agar, a natural thickener, gives the marmalade a pleasant density, making it both soft and elastic. This dessert was born in Russian cuisine out of a desire to make natural sweets without harmful additives. Orange marmalade is perfect for breakfast, a light snack, or as an addition to the tea table. Juice 3-4 oranges to get 400 ml. My juice has pulp because I make it in a Thermomix, but it can also be made without pulp, and it will be good too.
- Oranges: 4 pieces

Combine 300 ml of juice with agar-agar and let it sit for 30 minutes. I used 2 level teaspoons. After 30 minutes, combine the remaining 100 ml of juice with sugar and bring to a boil.
- Agar-agar: 2 teaspoons
- Sugar: 1 glass

Add juice with agar-agar here, stirring, bring to a boil and cook for 5-7 minutes. Remove from heat and let it sit for 10 minutes.
- Agar-agar: 2 teaspoons

Prepare the molds. Pour the hot mixture into them, let it cool to room temperature, and place it in the refrigerator.
