Pies made from an English recipe embody the British tradition of home baking, combining simplicity and sophistication. They are small tarts with a delicate buttery base topped with a crispy pastry star. The origins of this recipe trace back to ancient English pastry traditions where such pies were made for holidays, decorated with powdered sugar and almond petals. Their taste is exquisite and gently sweet: the crumbly dough harmonizes with the fruit filling, while a light egg glaze gives them a golden shine. These pies are perfect with a cup of strong tea, creating an atmosphere of coziness and leisurely conversations. They are served at Christmas feasts, tea parties, or simply as a little treat to lift one's spirits any day.

1
Immediately preheat the oven to 180 degrees. Mix the sifted flour and chopped butter with your fingers to make crumbs. Add the powdered sugar and yolk.
- Wheat flour: 250 g
- Butter: 125 g
- Powdered sugar: 25 g
- Egg yolk: 1 piece
2
Add milk to make the dough soft. Knead the dough slightly on a floured surface (until smooth).

3
Roll out the dough to a thickness of 1 cm. Cut out 12 circles (you can use a glass) and 12 stars (slightly smaller than the circles).
4
Grease the tartlet mold with oil, sprinkle with flour, and place circles of dough, pricking the base several times with a fork.
- Butter: 125 g
- Wheat flour: 250 g
5
Fill the tartlets halfway with filling and cover the top with stars. Brush all the stars with beaten egg.
- Chicken egg: 1 piece
