In a deep pot with a thick bottom, combine 1 cup of milk, cream, sugar, salt, maple syrup, and cinnamon sticks. Place the pot over medium heat and bring to a boil, then remove from heat and let it sit covered for half an hour. After that, strain the milk-cream mixture, removing the cinnamon sticks, return it to the heat, and bring to a boil again. Separately, dissolve the starch in the remaining milk. Introduce the milk with dissolved starch into the boiling milk and cook over medium heat, stirring constantly, until it reaches the consistency of milk jelly. Remove from heat, add Philadelphia, and mix until smooth.
- Milk 3.2%: 2 glasss
- Cream 33%: 1.3 glass
- Sugar: 0.7 glass
- Salt: pinch
- Maple syrup: 0.2 glass
- Cinnamon sticks: 2 pieces
- Cornstarch: 1.5 tablespoon

Place the pot in a cold water bath. To do this, fill a large bowl with very cold water and ice cubes. Place the pot with the cream on top of it. Stir the cream occasionally until it cools completely.

Remove the ice cream pot from the water bath, cover tightly with a lid, and place in the refrigerator overnight for further cooling.

Take the ice cream out of the freezer, pour it into the freezer, and churn according to the instructions for 20-40 minutes. Add cranberries and chopped walnuts in the last minute of churning. Transfer the ice cream to a container and place it in the freezer for at least 3 hours until fully set.

If there is no freezer, immediately pour the ice cream into a container, add cranberries and nuts, and place it in the freezer. Take it out and stir the contents of the container every 20-30 minutes until it freezes.
