Simple thin pancakes

Thin pancakes are a classic treat of Russian cuisine, delicate and airy with a light creamy taste. They date back to ancient times and symbolize the sun, warmth, and joy. They can be served with various fillings: honey, jam, sour cream or even meat. Pancakes are quick to prepare: the batter made from eggs, warm milk, flour and butter becomes elastic allowing thin circles to be baked on a hot skillet. Adding baking soda makes them lacy while proper cooking ensures they are tender and soft. They are perfect for breakfast or festive tables, providing comfort and enjoyment in every bite.
