Fluffy kefir pancakes are a cozy and traditional breakfast of Russian cuisine, filled with softness and airiness. Their history goes deep into home culinary heritage, where simple ingredients came together to create a wonderful texture and rich flavor. Thanks to kefir, the dough acquires a delicate acidity that harmonizes with the light sweetness of sugar. Butter adds a subtle milky note, while baking powder makes the pancakes incredibly airy. They are perfect for a morning family feast and can be complemented with honey, jam, or sour cream. Such pancakes symbolize home comfort and leisurely weekends when the aroma of warm baked circles fills the kitchen, creating an atmosphere of joy and warmth.
