Woodpile Cake with Sour Cream

The cake 'Polenitsa' with sour cream frosting is a true masterpiece of Russian cuisine, inspired by the image of stacked firewood in the forest. Its airy sticks made from choux pastry soaked in delicate sour cream create a unique texture – crispy on the outside and soft on the inside. Put water on the fire, add oil and salt. Heat until boiling (and the oil melts).
- Water: 1 glass
- Butter: 200 g
- Salt: pinch

Reduce the heat to minimum and add the flour. Mix thoroughly until a homogeneous mass forms.
- Wheat flour: 2.5 glasss

Remove the resulting mass from the heat and let it cool.

When the mixture cools, gradually add the eggs.

Place the prepared dough in a pastry bag (or syringe) and squeeze out elongated sticks (it's better to make them wider so they can soak up more cream).

Place in the oven for 20 minutes (until golden crust forms) at 200 degrees.

Meanwhile, mix sour cream with sugar for the cream (you can whip it). Whip well until the sugar dissolves. Soak the resulting sticks well in the cream.
- Sour cream: 700 g
