Onion pie "Zwiebelkuchen"

Zwiebelkuchen is a traditional German dish from the Pfalz and Baden-Württemberg regions. Its history is linked to the autumn grape harvest when this pie was baked as a perfect complement to young wine. Zwiebelkuchen combines tender dough with a juicy filling of golden onions, cream cheese, yogurt, smoked turkey, and bacon. Emmental adds a rich flavor while nutmeg and pepper blend enhance the aroma's depth. The slight tang of sour cream and cottage cheese enriches the taste. This pie pairs perfectly with a glass of white wine or strong black tea, and its golden crust and rich filling evoke warmth and coziness like memories of sunny autumn days in the vineyards.

Melt a mixture of butter and olive oil in a deep skillet.
- Butter: 50 g
- Extra virgin olive oil: 8 tablespoons

Meanwhile, we slice the onion into half rings, add it and fry until it turns golden with an appetizing smell (make sure it doesn't burn), about 10 minutes. We let the onion cool and then work on the dough.

Sift the flour with the baking powder, separately mix the cottage cheese with one egg, adding a little salt and olive oil (2 tablespoons).
- Wheat flour: 400 g
- Baking powder: 10 g
- Cottage cheese 18%: 200 g

Then we mix the sifted flour with the cottage cheese mass, gradually adding milk, to knead an elastic but firm dough.
- Wheat flour: 400 g
- Cottage cheese 18%: 200 g
- Milk: 6 tablespoons

We mix the cooled onion with sour cream, yogurt, and melted butter.
- Onion: 7 heads
- Sour cream 20%: 300 g
- Natural yoghurt: 300 g
- Butter: 50 g

Then finely chop the idea and bacon and add them to the filling.
- Smoked Turkey Roulade: 150 g
- Bacon: 150 g

Grate the Emmental cheese on a large grater, add the remaining three eggs, mix, and add to the filling. Add salt, pepper, and nutmeg, and mix everything well again.
- Emmental cheese: 300 g

We will roll out the dough in such a way that the edges overlap the sides of the mold — we will slightly cover the filling with them later. We will spread the dough in the greased mold, place the filling on top, and fold the edges.

Place in a preheated oven at 200 degrees, in the middle, for even baking of the dough and filling. Wait 25-30 minutes, take it out, cool it down, and eat!
