Grate the orange zest finely - you will need one tablespoon of orange zest for the dough.

Mix pieces of butter in a blender with powdered sugar and a pinch of salt, add egg white, and combine with the butter. Gradually add the sifted flour, vanilla sugar, and cocoa powder in parts, mixing well after each addition. Add orange zest and knead into a uniform dough.

If the dough has warmed up and started to melt during this time, put it in the fridge for a quarter of an hour; otherwise, it will be difficult to roll it out well. Roll the chilled dough into a cylinder about 4 cm in diameter, wrap it in foil, and place it in the fridge for at least one and a half hours.

Once the dough is well chilled and set, cut it into slices about 1 cm thick with a very sharp knife. The texture of the cut should resemble sorbet. Line a baking sheet with parchment paper, place the cookies on it, and send them to a preheated oven at 180 degrees for ten minutes.
