Peel the pineapple, slice it into rounds, and cut out the core with a knife.

Heat the grill pan until it starts to smoke slightly, and grill the pineapple slices for about two to three minutes on each side.

Pour demerara into a regular pan and place it on the heat. Gradually, the sugar will melt from the heat and turn into a boiling brown liquid.
