It's better to start with a nut base. Grind sesame into flour (for example, in a coffee grinder) and hazelnuts into crumbs. Mix sesame and hazelnuts (which should be soaked overnight) with dates, adding a pinch of salt. Transfer the resulting sticky mass to a container and place it in the freezer for half an hour to an hour to firm up a bit.
