Preheat the oven to 220 degrees.

Heat butter and olive oil in a pan over medium heat. Add sliced onions and thyme, and sauté until soft and golden for 10 minutes.
- Butter: 1 tablespoon
- Extra virgin olive oil: 2 tablespoons
- Onion: 1 head
- Chopped fresh thyme: 2 tablespoons

On a floured surface, roll out the dough into a rectangle about 22x38 cm.
- Wheat flour: to taste

Place the dough on a parchment-lined baking sheet and put it in the oven, immediately reducing the temperature to 200 degrees. Bake for about 12 minutes until the dough starts to rise.
- Yeast puff pastry: 500 g

Spread the onions evenly over the dough, leaving a small edge, then sprinkle with chopped olives and anchovies (optional). Bake for another 15 minutes. Then reduce the temperature to 190 degrees and bake for another 15 minutes until done and golden brown.
