Focaccia with roasted garlic, green onions, and provolone cheese is a magnificent blend of flavors inspired by traditional Mediterranean cuisine. This aromatic dish gained popularity due to its tender dough infused with garlic paste and fresh rosemary, giving it an exquisite herbal aroma. The provolone cheese melting on the crispy crust adds a rich creamy flavor, while the green onions refresh and highlight the harmony of all ingredients. This dish is perfect for a cozy family dinner or a friendly gathering, especially when paired with a glass of white wine or spiced olive oil. Grilled focaccia takes on a pleasant smoky note that makes it even more tempting. This recipe is a true delight for lovers of Italian and Greek gastronomy.

1
Make garlic paste from garlic heads (see note).
- Garlic: 2 heads
2
Preheat the grill.
3
Divide the dough into 2 pieces and roll each out on a floured surface into a rectangle about 30x17 cm.
- Pizza dough: 500 g
- Wheat flour: to taste
4
Place 1 rectangle of dough on the grill and cook until golden for about 2 minutes. Flip and cook for another couple of minutes. Transfer to a cutting board. Repeat the same with the remaining dough.
5
Leave the baked dough for a couple of minutes and cut the focaccia in half, into 2 layers. Spread garlic paste inside the layers and sprinkle with rosemary. Then sprinkle with grated cheese and finely chopped green onions. Fold the halves together and press lightly.
- Garlic: 2 heads
- Freshly chopped rosemary: 1.5 tablespoon
- Provolone cheese: 200 g
- Green onions: 1 bunch
6
Wrap each focaccia in foil and grill for 5-6 minutes, flipping once, until the cheese melts.
7
Unwrap the foil and cut into strips. Serve immediately.
