Peel the apples and remove the cores, then cut them into quarters. Transfer to a saucepan and add the remaining ingredients. Cook over medium heat, covered, stirring with a wooden spoon, until soft, about 50-60 minutes, adding a little vinegar if necessary.

- Ground ginger: 1 teaspoon

- Lemon juice: 2 tablespoons
