Liver pancakes are a traditional dish of Russian cuisine, characterized by a rich meat flavor and tender texture. Historically, this dish originated as a way to prepare liver in a more appetizing and convenient form while making it softer. Liver pancakes have a light golden crust and a soft, juicy center. They pair wonderfully with sour cream, fresh vegetables, or spicy sauces. Due to their rich iron and vitamin content, this dish is not only tasty but also healthy. Liver pancakes are often served at family dinners or gatherings as they are easy to prepare and their taste evokes the comfort of home cooking.

1
Grind the liver in a meat grinder. It is advisable to do this when it is not completely thawed. Add flour to the ground liver until it reaches a non-liquid dough consistency (it should resemble regular pancake batter). Then add an egg, salt, and mix everything thoroughly.

Fry in vegetable oil. It's best to place the batter in the pan with a tablespoon, so the pancakes turn out miniature, like small cutlets, and fry well.
