Prepare pistachio crumbs. Melt 100 grams of butter, add 100 grams of brown sugar, 100 grams of pistachios, and flour. Mix in a mixer until the mixture is homogeneous. Wrap in plastic wrap and refrigerate for 2 hours. Once cooled, remove the wrap and chop into fine crumbs. Evenly spread the crumbs on greased baking paper, place in a preheated oven at 160 degrees, and bake for 30 minutes.

Prepare chocolate cream. Whip the cream. Melt chocolate with olive oil in a water bath at 40–42 degrees. Gently mix with the whipped cream.
- Cream 35%: 500 ml
- Dark chocolate 55%: 300 g
- Extra virgin olive oil: 200 ml

Prepare pistachio waffles. Preheat the oven to 120 degrees. Mix 140 grams of ground pistachios, 115 grams of sugar, 0.5 cups of egg whites, and 80 grams of melted butter into a uniform batter. Cover and refrigerate for 1 hour. Spoon the cooled mixture onto greased baking paper in portions. Shape each portion into a circle with a diameter of 5 cm. Bake in the oven for 25-30 minutes.
- Ground pistachios: 240 g
- Sugar: 115 g
- Egg white: 0.5 glass
- Butter: 180 g

Assemble the dessert. In 4 tall glasses, place 1 tablespoon of pistachio crumbs. Evenly distribute half of the cream among the glasses. Add a layer of the remaining crumbs and cream. Decorate the dessert with pistachio wafers.
