Cut a 25 cm diameter circle from baking paper for the springform pan.

Melt a small piece of butter, grease the bottom of the pan, then place parchment paper at the bottom and grease it with butter as well. Sprinkle a small amount of sugar (shake off the excess).

Preheat the oven to 180 degrees. Melt the butter and chocolate in a water bath, remove from heat, stir in the brandy, and let cool.

Separate the egg whites from the yolks. In a separate bowl, beat the yolks with sugar. Pour the mixture into the chocolate and add the hazelnut flour (hazelnuts can be ground in a blender).

In a separate bowl, whip the egg whites into a soft but firm foam. Gently fold the egg whites into the chocolate-nut mixture using a spatula (start by adding a tablespoon, then double the amount, and finally add the rest). Pour the finished mixture into a mold.

Peel the pears, remove the core, and cut each in half. Arrange the pear halves in a circle in the baking dish, pressing them into the dough. Bake the pie for 40 minutes until the pears are soft and the pie is well baked. Cool, remove from the mold, and dust with powdered sugar.
