Pancake pie with spinach and gruyere

For the sauce, melt butter in a saucepan, add finely chopped onion, and sauté for about 5 minutes over low heat until translucent. Then add flour and sauté for another 2 minutes. Slowly stir in the milk and cook until the sauce thickens, breaking up lumps, for about 5 minutes. Add 1 cup of Gruyère, season with salt, pepper, and add nutmeg.
- Butter: 2 tablespoons
- Onion: 0.5 head
- Wheat flour: 2 tablespoons
- Milk: 1.5 glass
- Grated Gruyere cheese: 120 g
- Ground nutmeg: to taste
- Coarse salt: to taste
- Freshly ground black pepper: to taste

In a pan, heat olive oil over medium heat, add minced garlic and sauté for about 2 minutes, then add chopped spinach and sauté again until soft for about 2 minutes. Add red pepper flakes, salt, and pepper. Squeeze lemon juice over the spinach, mix, and let it cool slightly. Squeeze out excess liquid and cut into small pieces.
- Olive oil: 2 tablespoons
- Garlic: 3 cloves
- Fresh spinach leaves: 140 g
- Red pepper flakes: pinch
- Lemon: 1 piece

Preheat the oven to 230 degrees.

Transfer all the sauce to a bowl, leaving 2 tablespoons in the saucepan.

Add spinach to the sauce and mix well.

Lightly grease the mold with oil and place a pancake, spread with spinach sauce (about 3 tablespoons). Repeat the layers 12 times. Grease the top pancake with the remaining sauce and sprinkle with the remaining cheese.

Send to the oven for about 10-12 minutes until the cheese melts. Let it cool slightly, transfer to a plate, cut into segments, and serve immediately.
