    For the sauce, melt butter in a saucepan, add finely chopped onion, and sauté for about 5 minutes over low heat until translucent. Then add flour and sauté for another 2 minutes. Slowly stir in the milk and cook until the sauce thickens, breaking up lumps, for about 5 minutes. Add 1 cup of Gruyère, season with salt, pepper, and add nutmeg.

    In a pan, heat olive oil over medium heat, add minced garlic and sauté for about 2 minutes, then add chopped spinach and sauté again until soft for about 2 minutes. Add red pepper flakes, salt, and pepper. Squeeze lemon juice over the spinach, mix, and let it cool slightly. Squeeze out excess liquid and cut into small pieces.
