Peel the pear, cut it in half, remove the core, and place it in a bag. Dissolve 150 grams of sugar in wine, pour it over the pear, add spices, and vacuum seal the bag.
- Pears: 1 piece
- Red wine: 500 ml
- Sugar: 160 g
- Anise (star anise): 1 piece
- Ginger: 2 g
- Carnation: 1 piece
- Black peppercorns: 4 pieces
- Chinese Five Spice: 5 g

Heat the water to 75 degrees and place a pear bag in it for three hours.

Roll out the dough slightly and cut out two rectangles approximately 15x20 cm. Line a baking tray with parchment paper, place the dough on it, lightly beat the yolk and brush it over the dough, leaving the center uncoated. Make light cuts on the dough about one centimeter from the edges, so the center can be easily removed later — and place it in a preheated oven at 180 degrees for twenty minutes. When the dough rises and browns, take it out of the oven and carefully remove the rectangular centers.

Put the wine with the prepared pears on the heat and reduce it to a syrupy consistency. At the end, dissolve 5 grams of butter in the sauce.

Sprinkle the prepared pears with sugar and place them in a preheated oven at 250 degrees on the top shelf for three minutes. Alternatively, you can sprinkle the fruits with sugar and torch them if you have one.
