Line the baking sheet with parchment.

Insert a stick into each apple, preferably from the side of the branches.
- Apple: 6 pieces

Pour ice water into a large bowl.

In a small saucepan, bring the cream with salt to a boil. Immediately add honey, bring to a boil again, reduce to low heat, and cook for 15-20 minutes until the mixture reaches 125 degrees (you will need a candy thermometer for this).
- Cream 40%: 1 glass
- Sea salt: 0.5 teaspoon
- Honey: 330 g

Then carefully dip the bottom of the saucepan into the prepared ice water (be careful not to let water get into the caramel) to stop the cooking process and cool until the caramel thickens slightly but does not harden. If you have cooled the caramel too much, return the saucepan to the heat for 10 seconds.

Slightly tilt the saucepan with caramel and dip the apples one by one so that the caramel covers them halfway or completely. Place on the prepared baking sheet and let cool.
