We melt the sugar with the yolks in a water bath until fully dissolved, add cheese and vanilla sugar. Once the mixture is homogeneous, we remove it from the heat and cool it.
- Sugar: 120 g
- Egg yolk: 5 piece
- Mascarpone cheese: 250 g
- Vanilla sugar: 0.8 teaspoon

Whip the cream with a mixer until fluffy, combine with the egg mixture, and mix.
- Cream 33%: 600 ml

We will make a syrup from 60 grams of water and 60 grams of sugar. When it cools down, we add coffee (2 teaspoons of coffee for 60 grams of water).
- Sugar: 120 g
- Instant coffee: 60 g

Soak the cut biscuit pieces with the prepared syrup and layer them in a glass, then add some cream, another layer of biscuit, and a layer of cream. Sprinkle with cocoa and refrigerate for 5 hours.
