Separate the yolks of three eggs from the whites and mix with sugar and vanillin until smooth. Whip the egg whites with powdered sugar until stiff peaks form. Combine both mixtures and beat, gradually adding flour and orange zest. Place the resulting dough in cookie shapes on a greased parchment sheet and bake until done.
- Chicken egg: 3 pieces
- Sugar: 100 g
- Vanillin: 0.5 teaspoon
- Powdered sugar: 115 g
- Wheat flour: 75 g

Soak the gelatin. Bring coffee with milk to a boil. When the mixture cools slightly, dissolve the gelatin in it, stirring until fully dissolved. Beat the egg yolks with sugar and coffee liqueur, then mix with the coffee mixture. Whip the cream with the egg white and a pinch of salt, and gently combine with the remaining mixture.

- Ground coffee: 50 g

- Egg white: 1 piece

- Cream: 350 ml

Line the bottom and sides of a round removable baking pan with sponge cookies. Pour the partially set mousse in the center. Decorate the top with whipped cream, grated chocolate, and orange slices. Refrigerate the dessert overnight.
