Line a large baking sheet with parchment.

In a small bowl, mix sugar and 0.5 teaspoons of cinnamon.
- Sugar: 0.3 glass
- Ground cinnamon: 1.5 teaspoon

In a deep skillet, heat the oil to 180 degrees over high heat. Add the walnut halves and fry until golden for 30 seconds (watch to prevent burning). Quickly transfer to a bowl with the sugar-cinnamon mixture using a slotted spoon. Mix well and spread evenly on a baking sheet. Cool for 15 minutes and chop slightly.
