Easter with raisins, lemon, and cardamom is a traditional Russian Easter dish symbolizing the bright holiday of the Resurrection of Christ. Its roots go back to ancient times when cottage cheese treats served as signs of abundance and purity. The delicate texture of the cottage cheese, the light sweetness of the raisins, and the citrus freshness of the lemon combine beautifully with the warm spice of cardamom, creating a harmonious festive flavor. Easter is traditionally served in the shape of a truncated pyramid, symbolizing Golgotha. This dessert is perfect for a festive family table, filling the home with the aroma of vanilla and the joy of the upcoming holiday.

1
Put the cottage cheese in a fine sieve and press it into a large bowl to remove lumps.
- Cottage cheese: 1 kg
2
Add lightly beaten eggs, raisins, softened butter, sugar, grated lemon zest, and vanillin to the cottage cheese. Mix everything well and add a little salt to taste.
- Chicken egg: 3 pieces
- Raisin: 95 g
- Butter: 100 g
- Sugar: 1 glass
- Lemon: 1 piece
- Vanillin: to taste
- Salt: to taste
3
Crush the cardamom seeds in a mortar and add to the cottage cheese mixture. Mix well.
- Cardamom pods: 2 pieces
4
Grease the mold for Easter with water and line it with cheesecloth or cotton fabric (if desired, make folds in the fabric so the pattern imprints on the cottage cheese).
5
Place the cottage cheese mixture in the prepared mold and press it down well. Cover with the ends of the cheesecloth and place a weight on top. Put the mold in a cool place for 10-12 hours.
6
Flip the mold onto the plate and remove the cheesecloth.
