Thinly slice each quarter of the lemons and place everything in a large pot. Add water and cheesecloth with seeds, and leave at room temperature for 24 hours.

Place the pot over medium heat and bring to a boil. Reduce the heat and simmer uncovered for about 45 minutes, until the volume is reduced to 4 cups.

Add sugar and, stirring, cook for about 15 minutes until a drop of jam sets on a cold plate. Don't forget to skim off the foam.

Place the jelly in sterilized jars, leaving some space at the top, and close tightly with a lid.

Cut the lemons into 4 pieces crosswise and remove the seeds. Wrap the seeds in a piece of cheesecloth.
