Line 4 small molds with 1 layer of cheesecloth.

In a bowl, mix cheese and cream until smooth. In another bowl, beat the egg whites into a stiff foam and gently fold them into the cheese mixture.
- Mascarpone cheese: 500 g
- Cream 48%: 1 glass
- Egg white: 3 pieces

Transfer the cheese mass into molds, cover with film, and place in the refrigerator for 8-36 hours.

Remove the cheese from the molds and place it on serving plates, removing the cheesecloth. Garnish with berries and chill before serving. Sprinkle with vanilla sugar. This cheese can also be spread on fresh rolls cut in half or pancakes.
