Mix warm milk with yeast, then add 200 grams of flour (from the total amount), 80 grams of sugar (from the total amount), and a pinch of salt. The dough should be thick and sticky, not liquid. Prepare in a deep bowl as the mixture will rise. Leave in a warm place for 40 minutes.
- Milk: 300 ml
- Fresh yeast: 15 g
- Wheat flour: 600 g
- Sugar: 230 g
- Salt: pinch

Take the starter, add the remaining flour (400 g), then 2 egg yolks and 50 grams of butter (from the total amount). Knead the dough; it may stick a little to your hands. Grease a deep bowl with vegetable oil and place it back in a warm place for 1 hour.
- Wheat flour: 600 g

Mix cinnamon with sugar (150 g).
- Cinnamon: 45 g
- Sugar: 230 g

Take the dough and roll it out into a rectangle 3 mm thick. Brush the dough with butter, evenly sprinkle cinnamon and sugar, and roll the dough into a log. Cut into equal parts about 3 cm wide (the width of two fingers).
- Butter: 80 g

Line the baking tray with parchment and place the rolls. Put it back in a warm place to rise for 30 minutes.

Preheat the oven to 180 degrees. Meanwhile, mix 1 yolk with 1 tablespoon of milk and brush the rolls. Place the rolls in the oven for 30–35 minutes.

Whip the cream cheese with powdered sugar in a bowl, then add cream and continue whipping.
- Mascarpone cheese: 200 g
- Powdered sugar: 80 g
- Cream 30%: 150 ml

Take the buns out of the oven, let them cool a bit. Spread with cream and enjoy.
