Delicious pancakes with kefir

The acid in kefir interacts with the soda, which makes the pancakes, as they say, lacy. Don't forget that kefir pancakes have a peculiar sourness, so it's good to add something very sweet to them - like honey or condensed milk.

Prepare all the ingredients.

Beat the eggs with sugar, salt, and vegetable oil.
- Chicken egg: 2 pieces
- Sugar: 45 g
- Salt: 0.5 teaspoon
- Vegetable oil: 60 ml

Gradually mix half the volume of kefir into the eggs.
- Kefir: 500 ml

Sift the flour and gradually add it to the dough. Mix until homogeneous.
- Wheat flour: 300 g

Add the remaining kefir to the dough.
- Kefir: 500 ml

Boil water and add baking soda to it. Pour the mixture into the dough while constantly whisking.
- Water: 200 ml
- Soda: 0.5 teaspoon

If lumps form in the batter, strain it. Let the batter sit for 10-15 minutes at room temperature.

Heat the pan well. Stir the batter again and pour a ladle of batter into the pan, spreading it evenly across the bottom.

Fry until the edges of the dough turn golden, then flip and fry for another 10-20 seconds.
