Cut the peaches in half and remove the pits.
- Peaches: 500 g

Place the peaches on the grill and roast them until a nice pattern forms on both sides.

For the caramel, pour sugar into the bottom of the pan and turn on the heat. The sugar should melt; there's no need to stir it, the heat will do the work.

When the sugar melts, pour in the cognac and ignite it. The alcohol from the cognac will evaporate, and the caramel will acquire a pleasant aroma.
- Cognac: 30 ml

When the cognac stops burning, add butter.

Place the peaches in the pan with the caramel and fry them for 3 minutes on both sides. The peaches should be soft on the outside but retain firmness inside. Transfer them to a clean dish and cover with foil to keep warm.

Pour peach juice into the pan with caramel and simmer everything together until it becomes a sauce.
