Aspic pie with egg and green onions

Egg and green onion pie is a cozy memory of Russian cuisine where simplicity meets rich flavor. This pie is especially popular in spring and summer when fresh green onions add aromatic freshness to the dish. The tender kefir dough is airy and soft, while the filling of boiled eggs and lightly fried onions provides a harmonious blend of creaminess and mild spiciness. Prepare all the ingredients. Take the butter out of the fridge in advance.
- Butter: 200 g

Prepare the filling. Boil 3 eggs hard, cool them down, and cut into small cubes.

Chop the green onion.
- Green onions: 150 g

Melt 30 grams of butter in a pan and lightly sauté green onions in it.

Mix onion with chopped eggs, add salt to taste. Cover and place in the refrigerator.

For the test, beat 3 eggs with salt and sugar.

Dissolve baking soda in kefir and mix with beaten eggs.
- Soda: pinch
- Kefir: 500 ml

Gradually add 270 grams of sifted flour. It's easier to mix it with a whisk at first, then with a spoon.

Add 150 grams of softened butter to the dough, bringing it to the consistency of thick sour cream. Let the dough rest for a couple of minutes (but no longer, or it will dry out and form a crust).

Grease the mold with the remaining butter and sprinkle with the remaining flour.

Put half of the dough into the mold (easier with a spoon, but you can also pour it). Distribute the filling over the dough.

Cover the filling with the remaining half of the dough and send it to a preheated oven at 180 degrees for 20 minutes.

Beat the egg and brush it on top of the pie. Optionally sprinkle the pie with seeds. Return the pie to the oven for another 20 minutes or until the crust is dark golden.

Cool the finished pie on a rack for 10–15 minutes.
