Combine the quartered plums, liqueur (or apple juice) in a pot and cook on low heat for 5-10 minutes until the plums are soft and their skins start to come off. Let them cool slightly and remove as much skin as possible (this is not very easy, but it's worth it because the dessert becomes much creamier).

- Liquor: 3 tablespoons

Place the plums in a food processor and make a smooth puree. Cover and chill for 1 hour. In a large clean bowl, whip the egg whites to stiff peaks and gradually add sugar. Mix with the plum puree.

Transfer the plum mixture to a low container and place it in the refrigerator for 1.5 hours until it thickens and starts to freeze. Serve with light cookies, garnished with red currants.
