Gooseberry jam

Gooseberry jam is a classic treat of Russian cuisine, featuring a bright flavor with a slight tartness. The prepared green, unripe gooseberries give the delicacy a special freshness and tender density. The syrup made from sugar and water creates a rich honey-fruity hue that perfectly complements the berries' tartness. Historically, this jam was often made in noble estates where gooseberries were a popular crop. An amazing preparation method using vodka makes the texture of the berries transparent and elastic. The jam pairs wonderfully with morning tea, pancakes, or fresh bread with butter, adding a touch of summer any time of year.
