Kefir Pancakes

Kefir pancakes have a pleasant sourness that goes well with salty fillings, such as red caviar. We got this wonderful recipe from Olga Syutkina.

Prepare all the ingredients.

Pour kefir into a saucepan, add sugar, salt, and citric acid. Heat gently while stirring until the sugar dissolves. Maximum up to 40 degrees.
- Kefir: 1 l
- Sugar: 3 tablespoons
- Salt: 0.5 teaspoon
- Citric acid: 0.3 teaspoon

Pour flour into a large bowl, leaving some aside.
- Wheat flour: 500 g

Pour half of the kefir mixture into the flour and mix.
- Kefir: 1 l

Add eggs to the dough and mix.
- Chicken egg: 3 pieces

Pour in the remaining kefir and mix again. The dough should be smooth, with the consistency of thick yogurt. If necessary, add more flour to achieve the desired consistency.
- Kefir: 1 l
- Wheat flour: 500 g

Add baking soda, mix, and let it sit for 10-15 minutes.
- Soda: 1 teaspoon

Heat the pan with the lid over medium-high heat. Grease the bottom with lard using a fork.
- Lard: 1 piece

Pour part of the batter onto a hot skillet and spread it out. Cover with a lid and bake for 1-2 minutes.

Flip and bake for another 30 seconds.

Place the ready pancake on a plate and brush melted butter on both sides.
- Butter: to taste

Bake all the pancakes this way.

Ready pancakes can be enjoyed immediately with favorite toppings, such as sour cream and caviar.
