Zucchini pancakes with bacon

Pancakes with fried bacon are a typical American breakfast, and the bacon can be either on the inside in the form of crispy crumbs, or on the outside: pancakes are often laid out in a stack, alternating with thin slices of crispy bacon, and poured with sweet maple syrup or molasses on top. Moreover, the close proximity of salty and sweet does not bother anyone - the smoked taste even gets along with moderate sweetness. But if you add zucchini to the dough, then this will only benefit the pancakes: the fresh taste of zucchini will remove the taste of lard from the bacon and give the pancakes a feeling of deceptive lightness (but do not be fooled, it is still a million calories). Maple syrup is difficult to find here, and it costs so much that you do not want to look for it. Therefore, homemade blackcurrant jam is suitable as a sweet sauce or sweet chili sauce, it's always available, inexpensive, and adds a nice Asian twist to everything it touches.

Peel the zucchini and grate it coarsely.

If there is time, you can salt them and leave for 10 minutes instead of squeezing; they will release excess moisture. If there is no time, immediately drain in a colander and squeeze well, gathering the pulp in handfuls.

Peel the garlic, crush it with the flat side of a knife, and chop it.

Chop the bacon finely.

Add garlic, bacon, salt, and pepper to the grated zucchini.

Beat the egg separately in a bowl with a fork and add it to the zucchini. Mix well.

Heat vegetable oil in a pan and spoon the batter into pancakes, spaced apart.
