The 'Tile' cookie is an elegant, crispy treat popular in Soviet cuisine. Its thin, curved shape resembles tiles on the roofs of old houses, from which its name derives. The protein dough with an almond aroma, gently sweetened with powdered sugar, melts in the mouth leaving a pleasant nutty taste. These cookies perfectly complement a cup of aromatic coffee or tea, adding sophistication to the moment. Their preparation requires precision: the dough must be thin and the rolling must be skillful to achieve the characteristic shape. Despite the simplicity of ingredients, 'Tile' surprises with its richness of flavor and texture, making them a favorite choice for cozy home tea parties.

1
Whip the egg whites with powdered sugar a little.
- Egg white: 4 pieces
- Powdered sugar: 150 g

2
Carefully add the flour and a pinch of salt.
- Wheat flour: 100 g
- Salt: pinch

3
Add ground almonds.
- Almond flour: 2 tablespoons

4
Melt the butter in the microwave and add it to the dough. It should be liquid.
- Butter: 100 g

5
Spread the dough with a tablespoon on a baking sheet lined with parchment paper. Smooth it out into thin ovals using a spatula. Place them at a certain distance from each other to prevent sticking later.

6
Place in a preheated oven at 180 degrees and bake for 5-6 minutes. Once the edges start to brown, remove them. While the cookies are still warm, take a rolling pin and carefully roll them up without removing them from the parchment. Make sure they don't break. Allow the cookies to set in the curved position and transfer to a dish.
