Lazy Khachapuri

Traditionally, the word "khachapuri" is used to describe any Georgian pastry topped with brine cheese. Lazy Khachapuri is a khachapuri that does not have dough as such, but has a mixture of flour, milk, egg, butter and cheese, which is prepared, again, in a not entirely traditional way - not in the oven, but in a frying pan greased with vegetable fat. This recipe includes a classic set of ingredients, but nothing prevents you from adding some herbs and spices - both traditional Georgian and any others. And an important nuance - brine cheese, and most likely you will use suluguni, which can be very salty by nature. Therefore, do not rush to add salt to the dough, first try the whole mass.

Grate the cheese on a coarse grater.
- Suluguni cheese: 200 g

Mix milk, egg, salt, sugar, flour, and baking powder with a whisk.
- Milk: 200 ml
- Chicken egg: 1 piece
- Salt: to taste
- Sugar: 0.5 teaspoon
- Wheat flour: 120 g
- Baking powder: 0.5 teaspoon

Add cheese to the dough and mix.
- Suluguni cheese: 200 g

Heat the pan, grease it with vegetable oil, and pour in the batter. Cover with a lid and fry on low heat for 7-8 minutes. The bottom should brown and the top should set.
- Butter: to taste

Flip the khachapuri and fry under the lid for about 3 more minutes until golden brown.

Brush the ready lazy khachapuri with butter and eat immediately.
