Lavash Chicken Pie

For those who are not very good with dough, baking a classic Russian chicken pie is not an easy task. First, you need to make a whole stack of pancakes, then layer them with several layers of filling. But if you use lavash instead of pancakes, everything becomes faster and easier. This chicken pie recipe is not quite Russian and not quite classic: in addition to chicken, it includes tomatoes and pizza mozzarella. Lavash pancakes are hidden under a layer of melted cheese and juicy filling, so no one will suspect a substitution or guess that the chicken pie is lazy.

Cut the chicken into one-centimeter pieces, place them in a heated pan with vegetable oil, and fry while stirring until it turns white.
- Chicken fillet: 500 g
- Vegetable oil: 45 ml

Add finely chopped onion and garlic to the pan, stir and fry until the onion becomes transparent.
- Onion: 2 heads
- Garlic: 2 cloves

Add canned tomatoes to the pan, stir, cook for another 3-4 minutes, season with salt, add all spices and remove from heat.
- Canned tomatoes in pieces: 200 g
- Salt: to taste
- Ground allspice: pinch
- Khmeli-suneli: 0.5 teaspoon
- Sweet paprika: 0.5 teaspoon

Crack 3 eggs into a bowl, add kefir, sour cream, salt, pepper and mix well with a whisk.
- Chicken egg: 3 pieces
- Kefir: 200 ml
- Sour cream: 50 g
- Salt: to taste
- Ground black pepper: to taste

Prepare a round mold for assembling the pie. Cut out four circles from the lavash according to the diameter of the mold.

Spread the prepared kefir mixture on the bottom of the mold, place a circle of lavash on top, and add the fried chicken.
- Thin lavash: 2 pieces
- Chicken fillet: 500 g

On top is grated Russian cheese mixed with chopped greens and a bit more sauce.
- Russian cheese: 200 g
- Dill: to taste
- Green onions: to taste

Layer all four layers of the pie. Cut the last round of lavash into portioned segments to make it easier to slice the pie.

Place the sliced circle on top, pour the remaining filling over it, and put it in a preheated oven at 180 degrees for 10 minutes.

Take the pie out of the oven, place thin slices of mozzarella on top, and return it to the oven for another 15 minutes.
