Separate the whites from the yolks. Whisk the yolks with softened butter.
- Chicken egg: 4 pieces
- Butter: 200 g

Sift the flour and baking powder, add to the butter and egg yolks. Knead a stiff dough.
- Wheat flour: 200 g
- Baking powder: 1 teaspoon

Divide the dough into two parts — 1/3 and 2/3. Form a ball from each part and cover with plastic wrap. Place the small dough ball in the freezer and the large one in the refrigerator for 1 hour.

Clean the apples: remove the skin and seeds. Grate the apples on a medium grater.
- Apple: 1 kg

Put the apples in a pot, add lemon juice and 100 grams of sugar. Simmer over medium heat for 15 minutes or until the liquid evaporates.
- Lemon juice: 15 ml
- Sugar: 280 g

Grate the lemon zest, add it to the apples, mix, and cool to room temperature.
- Lemon zest: 1 teaspoon

Take the dough out of the fridge, roll it out with a rolling pin, place it in a round mold at the bottom and make a border about one centimeter high. Pre-line the bottom of the mold with baking parchment.

Whip the egg whites to stiff peaks, then gradually add sugar while continuing to whip. Whip until the sugar dissolves and the mixture becomes white and glossy.

Place apples on the dough in the mold. Grate half of the dough from the freezer on top.
- Apple: 1 kg

Spread the protein mass on top. On the egg white - add the second half of the grated dough. Send to an oven preheated to 190 degrees for 45 minutes.

Turn off the oven after 45 minutes. Open it and leave the pie inside for 30 minutes. Let the pie cool completely, dust with powdered sugar, and serve.
