Apple charlotte with egg whites

Separate the eggs into whites and yolks.
- Chicken egg: 3 pieces

Whisk the yolks with 1 cup of sugar until pale.
- Sugar: 180 g

Whisk the egg whites with salt separately until fluffy.
- Salt: pinch

Use a spatula to mix the egg whites with the yolks, trying not to lose volume.

Sift the flour and mix it into the dough.
- Wheat flour: 130 g

Dissolve baking soda with lemon juice and add to the dough. Mix the dough well again.
- Soda: pinch
- Lemon juice: 1 teaspoon

Slice the apples into thin wedges.
- Apple: 3 pieces

Grease the baking pan with butter and sprinkle with breadcrumbs.
- Butter: to taste
- Breadcrumbs: 20 g

Bake the charlotte in a preheated oven at 180 degrees for 45-50 minutes. Check the readiness of the dough with a skewer: if it comes out clean, the charlotte is ready. Let the finished pie cool; it will taste better an hour after baking.
