Apple and raisin roll is a delicate treat of European cuisine that captivates with its harmonious blend of sweetness and slight tartness. This dessert evokes cozy family evenings filled with the aroma of fresh baking. The tender dough soaked in butter and vanilla envelops a juicy filling of grated apples generously spiced with cinnamon and raisins. The light tartness of lemon juice adds freshness, while powdered sugar and almonds decorate the finished roll, giving it a crunchy texture. It can be served with tea or coffee, and leftovers can be easily stored in the fridge to prolong the enjoyment of this delicate delight. It is suitable for both festive tables and quiet family evenings, bringing warmth and joy to every bite.

1
Prepare the dough: in a bowl, mix butter, yolk, flour, baking powder, sugar, milk, and vanilla with a fork until a homogeneous dough is formed. Cover the bowl with plastic wrap and refrigerate until the filling is prepared.
- Butter: 100 g
- Chicken egg: 1 piece
- Wheat flour: 180 g
- Baking powder: 2 teaspoons
- Vanillin: 1 piece
- Milk: 2 tablespoons
2
Prepare the filling: grate the apples on a coarse grater, squeeze out the liquid and place in a bowl (the squeezed juice can be drunk).
- Apple: 0.8 piece
3
Add raisins, cinnamon, sugar, and lemon juice and mix well until the sugar and cinnamon are evenly distributed.
- Lemon juice: 3 tablespoons
- Roasted almonds: to taste
- Powdered sugar: to taste
4
Prepare the roll: sprinkle baking paper with flour and roll out the dough on it to a thickness of 0.5 cm. Spread the filling on it and roll it up (you can fold the dough by hand at first, then lift the paper and roll up the roll with its help).
5
Preheat the oven to 180 degrees. Place the roll on parchment paper lined baking sheet diagonally, brush with egg white and bake for 30 minutes until golden brown. Remove from the oven and let cool to room temperature.
6
Before serving, sprinkle with powdered sugar and almonds. Leftover roll can be stored in the refrigerator.
