Cottage cheese croissants with butter

Take the butter out of the fridge in advance to reach room temperature. Preheat the oven to 180 degrees. In a bowl, combine cottage cheese, soft butter, sugar (40 g), and an egg. Blend everything until smooth.
- Cottage cheese: 400 g
- Butter: 100 g
- Sugar: 80 g
- Chicken egg: 1 piece

Put baking soda in a small bowl, pour in a little lemon juice, mix it, and only then add it to the cottage cheese. Mix and let it sit for two minutes.
- Soda: 1 teaspoon
- Lemon juice: 1 teaspoon

Add all the flour at once and quickly knead the dough by hand. It will be slightly sticky, put it in the fridge for 5 minutes.
- Wheat flour: 250 g

Dust the work surface and rolling pin with flour. Place half of the dough on the table and roll it into a circle with a diameter of 20 cm. Cut it into 8 equal triangles. Sprinkle the dough with a tablespoon of sugar.
- Wheat flour: 250 g

Roll each triangle once with a rolling pin to press the sugar into the dough and make the triangle longer. Roll it up starting from the wide end. Coat in sugar, fold slightly to shape it into a crescent. Place on a baking sheet lined with parchment dusted with flour.

Bake for about 15-20 minutes until a nice golden color. Dust the cooled croissants with powdered sugar.
