Place water, honey, and sugar in a large pot. Heat on low until the sugar is completely dissolved. Stir constantly. Leave on low heat to reduce.
- Honey: 125 g
- Sugar: 450 g
- Water: 180 ml

Make the album: place a large pan on low heat. Add melted butter and flour to the pan. Heat on low until light caramel color. The taste should be nutty. Keep warm until the caramel is ready.
- Wheat flour: 500 g
- Melted butter: 250 g

Cook the caramel mixture over low heat until it turns caramel color. Check the readiness of the caramel by tasting a drop. If the drop hardens, the caramel is ready. Pour the caramel onto a wide flat dish.

Wait a few minutes for the caramel to cool, remove it from the dish, and then stretch it by hand until it turns white.

Once the caramel turns white, place it on the countertop and mix it with alba. Incorporate the caramel into the alba and stretch it on the table. Pull the caramel with alba into thin threads. Shape it in special molds.
