Soft pieces of pumpkin steamed with vanilla and spices are coated in cane sugar to form a velvety glaze. Nut crumbs add a light crunchiness while tahini provides richness and an Eastern flair. Peel the pumpkin from the skin and seeds and cut it into large squares or rectangles. Place the pumpkin in a thick-bottomed pot and sprinkle with sugar. Adjust the amount of sugar to your liking.
- Butternut squash: 400 g
- Cane sugar: 0.5 glass

Carefully break the cinnamon stick and distribute it along with the cloves between the pieces of pumpkin. Pour in water, add vanilla extract, and place the pot on low heat. This low heat is necessary for the water to steam the pumpkin without evaporating. Cover with a lid and simmer the pumpkin until tender. Check doneness with a fork; it should be soft and easily pierced but not falling apart. Once ready, allow it to cool.
- Cinnamon sticks: 1 piece
- Carnation: 3 pieces
- Vanilla extract: 0.5 teaspoon

While the pumpkin is cooking, chop the walnuts in a glass or blender.

Place 3-4 pieces in small deep bowls. Optionally, drizzle with the prepared sugar syrup on top. Pour with tahini paste and generously sprinkle with walnuts.
