Cheesecakes with apple

Apple syrniki are a delicate and aromatic dish of Russian cuisine, loved by many generations. Historically, syrniki were made from simple and accessible ingredients like cottage cheese, flour, and eggs, while the addition of apples gives them a pleasant fruity note and a slight tanginess. The caramelized cream makes the dish especially tender and airy. They can be served as a standalone dessert or with honey, sour cream, or berry sauce. Syrniki are baked in the oven, making them soft inside and slightly crispy outside. This is an ideal breakfast or treat for tea that brings warmth and coziness of home cooking.

Add an egg, vanilla sugar, 4 tablespoons of sugar, salt, and semolina to the cottage cheese and mix everything well.
- Cottage cheese 9%: 500 g
- Chicken egg: 1 piece
- Vanilla: to taste
- Sugar: 80 g
- Salt: pinch
- Semolina flour: 75 g

Pour cream into a pot and add 80 grams of sugar. Cook the cream over medium heat until it takes on a nice milky hue (the cream will start to boil and rise, so use a taller pot). Don't step away; keep stirring constantly. Once the cream changes to a milky-caramel color, turn off the heat.
- Cream 33%: 500 ml
- Sugar: 80 g

Put some flour on the work surface, take a part of the cottage cheese, about a third, and make a sausage out of it. Cut it into syrniki. Shape the pieces into beautiful syrniki.

You can add any fruits to syrniki, for example, apples. Peel the apples, cut them in half, then in half again, remove the core and slice thinly.

Add a little vegetable oil and some butter to the pan. Place the cheese pancakes in the pan and fry them lightly, do not cook them all the way.

Pour a little filling at the bottom of the mold and place the cheese pancakes (leaving space between them). Arrange apples on the sides and top of the cheese pancakes. Pour filling over the fruits (not too much). Then place cheese pancakes again and do the same as with the bottom layer.

Preheat the oven to 180 degrees and bake for about 15 minutes.
