The textbook pie of Russian cuisine is mannik. The classic is the one made with kefir, and that's the one we included in our "Golden Thousand". Serve with sour cream.

Prepare all the ingredients.

Pour kefir over the semolina, mix it, and let it sit for at least an hour, preferably two to three hours, to swell.
- Semolina: 200 g
- Kefir: 250 ml

Melt the butter.
- Butter: 100 g

Beat the eggs with sugar and a pinch of salt.
- Chicken egg: 3 pieces
- Sugar: 200 g
- Salt: pinch

Add butter to the eggs, continuing to whisk until smooth.

Combine the semolina and egg mixtures, add flour and baking soda, and mix with a mixer.
- Semolina: 200 g
- Wheat flour: 130 g
- Soda: 1 teaspoon

Grease the baking pan with butter and dust with semolina.

Place the dough in a mold and send it to an oven preheated to 190 degrees for 30-40 minutes.

Let the finished semolina pudding sit for at least 10 minutes before serving. This is needed for it to stabilize.
