Combine 500 g of wheat flour, 50 g of sugar, a pinch of salt and mix in a bowl with a paddle attachment. Add 50 g of cooking fat to the dry ingredients and mix on low speed until crumbly. Gradually pour in 200 g of red wine and mix again.

Wrap the dough in plastic wrap and refrigerate for 30-50 minutes. Roll out the chilled dough into thin strips. Cut out circles from the dough using a special cutter.

For the filling, add a pinch of salt and 100 g of powdered sugar to 400 g of ricotta and mix everything with a whisk. Chop 50 g of dark chocolate, leaving some for decoration, and also chop 50 g of pistachios. Add the candied fruits, chopped chocolate, and pistachios to the ricotta and mix everything together. Transfer the filling to a pastry bag and refrigerate.

For decoration, melt white and dark chocolate separately in a water bath. You can add a little vegetable oil. Dip one end of the cooled tubes in the melted white chocolate and place them on plastic wrap. Put the tubes with white chocolate in the freezer for a few minutes.

Dip the straws in melted dark chocolate on the other end and place them on plastic wrap. Put the chocolate-covered straws in the freezer for a few minutes.

Fill the tubes with chilled filling. Dip one side of the tube in dark chocolate with orange candied fruits, and the other side in white chocolate with dark chocolate crumbs.
