This traditional treat has been made for holidays and family celebrations for centuries. The yeast dough is airy and tender, while the poppy filling is sweet and slightly nutty. Vanillin adds a subtle, pleasant fragrance, and the golden crust brushed with egg yolk makes the roll not only appetizing in appearance but also crispy. This roll pairs perfectly with tea or coffee, creating a cozy atmosphere at home. It can be sliced into portions to enjoy each layer of soft dough and aromatic filling. Such a dessert brings a sense of warmth and celebration, and its preparation is a true art passed down through generations.

Prepare all the ingredients.

Prepare the dough: add 1 tablespoon of sugar and yeast to 50 ml of warm milk and mix until smooth. Gradually add flour with a spoon while stirring constantly to achieve a consistency of liquid sour cream without lumps. Cover with a cloth and place in a warm place to rise until doubled in volume and a 'bubbly cap' forms. Prepare the mixture: place the remaining milk, sugar, and margarine (or butter) in a small bowl and heat on low until the sugar and margarine dissolve (do not let it boil!). Add vanilla, salt, and eggs to the sifted flour.
- Milk: 250 ml
- Sugar: 6 tablespoons
- Dry yeast: 11 g
- Wheat flour: 1000 g

- Vanillin: 1 g
- Salt: 3 g
- Chicken egg: 2 pieces

Knead the dough: pour the risen starter and fat into the sifted flour with vanilla, salt, and eggs. Add 3 tablespoons of vegetable oil to the dough. After kneading, the dough should be soft and not stick to your hands. Cover the dough and place it in a warm place to rise.

After the dough doubles in size, it needs to be punched down.

Divide the prepared dough in half. Flatten each ball (piece) of dough and stretch it on the table, greasing it with vegetable oil using your hands (not a rolling pin!). The thickness should be about 1 cm. Then take the poppy paste and spread it on the roll.
- Vegetable oil: 50 ml
- Poppy seed paste: 500 g

Use a silicone spatula (or knife, spoon) to evenly spread the filling over the dough. Roll it up tightly.

Line a baking tray with parchment paper and grease it with melted butter. Place the roll on it. Cover the roll with paper as well and let it rise in a warm place for 20 minutes. Once the roll has risen, brush it with beaten egg yolk and sprinkle with dry poppy seeds. Bake in a preheated oven at 180 degrees for 30-40 minutes.

Take the roll out of the oven and let it cool.
