Cook the rice until ready. I took long-grain, it's easier to cook it fluffy.

In olive oil, sauté the onion in a pan, add coarsely chopped garlic and grated carrot.

Stirring, add diced chili and sweet peppers. Sauté a bit more, then add diced tomatoes.

Add the thawed seafood mix to the vegetables, reduce the heat, and simmer for five minutes covered.

Place vegetables and seafood in a pot, add one (or one and a half) liters of water, and bring to a boil.

Add salt, ground pepper, and possibly other favorite spices. Pour in the tomato juice and add the julienned potatoes. Cook on low heat until the potatoes are done.
