Quick kharcho

Quick kharcho is a simplified version of the classic Georgian soup that retains its rich flavor and aroma. Traditionally made with beef and walnuts, this variant substitutes meat with minced meat, speeding up preparation without losing depth of taste. Tomato paste and tkhemali give the dish a characteristic sourness, while khmeli-suneli fills it with the richness of Georgian spices. Onion and garlic add piquancy, and rice makes the soup hearty. It’s the perfect dish for those who want to enjoy traditional Caucasian flavors without long hours in the kitchen. Quick kharcho pairs well with fresh herbs and lavash, and its warming spiciness makes it especially pleasant on cool days.
