Soak the beans and mixed legumes in cold water for 12 hours.

Drain the water. Fill with new water and bring to a boil. Optionally, add vegetable broth cubes at this stage. Cook for about 15 minutes.

Peel the carrot and cut it into large sticks.

Peel and chop the onion medium. If the onion is large, take 1 piece.

Add onion, carrot, oregano, and diced tomatoes in their juice to the soup and simmer for about 1 to 1.5 hours until the beans are cooked.

AND ATTENTION — finely chopped mint. Fresh mint will change the taste of the soup, so you can try it without it. Those who like fresh mint in soups can add it freely, but it's also fine without.
