Turkey Meatball Soup with Pickled Cucumber

Pour 200 ml (a glass) of water and put it on the fire, wash and clean all the vegetables (except for tomatoes, potatoes, and pickles), cut them into medium pieces, slice the leek into thin rings, chop the parsley (or dill, whichever you prefer), and add everything to boil in the water, lightly salting it. When the water with the vegetables boils, blend everything and add the remaining water. Add a bay leaf.
- Water: 1000 ml
- White part of leek: 100 g
- Parsley: 30 g
- Celery: 50 g
- Sea salt: to taste

Wash the turkey fillet, dry it from water and grind it in a meat grinder. Season the minced meat with salt and a little pepper, and add khmeli-suneli. Form balls and add them to the soup while stirring to prevent the meat from sticking to the bottom of the pot.
- Turkey fillet: 400 g

Finely chop the cucumbers (they can be replaced with pickled black olives) and add them to the soup along with the meatballs or right after.

Wash and clean the potatoes, cut them as you like.

Wash the tomato, remove the stem, and blend it (in winter, it can be replaced with tomato paste or frozen tomatoes). When the meatball soup boils, add potato and tomato to it.

Cook the soup until the potatoes are ready.

When the soup is ready, turn off the heat and wrap the pot with a towel, leaving the soup for 10 minutes. It can be served like this or with sour cream.
